2 : to cook in a highly seasoned sauce

Etymology:
In the late 1400s, the Taino Indians were the most numerous people of the Caribbean. To cook their meat they constructed something they called a "barbacoa," a grill of green wood on which meat cooked over hot coals. The Spanish who took over some of the Caribbean islands copied the method, borrowed the word, and introduced both to mainland America in the 17th century. In English it became "barbecue," and also came to mean a social gathering at which barbecued food is eaten.
